Another day of chocolate cake

Before....
Covered with ganache.
Baked this. The reason of the cracked cake was mishandling it while it was still warm & super soft. We couldn't eat it, it's not ours. Luckily, the person who asked me to bake this just wanted to add calories to her diet. So, I don't feel guilty about the cracked cake.

My all time favourite. The 1st time I had these was in the 80s. McD introduced them as McD breakfast biscuits. But it's no longer in the breakfast menu.

I guess the English call them scones, the Americans call them biscuits. They can be eaten on its own. For breakfast, just add scrambled eggs & sausages at the side. For afternoon tea, serve with jam & cream. I love mine savoury. You can add grated cheese & dried herbs into the dough.

I didn't manage to take a photo of the cake when it was a whole square of 9 inch. This is what's left...

Heh.....my food stop is long way overdue......it's been 2 years since I last update it.

Family Iftar Gathering

popiah basah, charkwey, ice jelly, dates
chicken tandoori,naan,murtabak,cucumber tomato salad,dal gravy
bubur masjid,bihun,fishball soup

This is our first time hosting Iftar gathering. I love the whole process from the beginning until the end. From the preparation to cleaning up.

We cooked naan, chicken tandoori, dal gravy, cucumber & tomato salad, fishball noodle soup, ice jelly. Food contribution from family members were popiah basah, murtabak, Indian rojak, local cakes, charkwey & butterfly fritter buns & not fogetting the delicious porridge we collected from the mosque.

The Tandoori mix is available at Mustaffa...not many Indian shops carry Ahmed brand. Another mix I strongly recommend is the Ahmed Briyani Mix...I think the packaging is slightly different at Mustaffa, the one that I have is bought at my neighbourhood Indian shop.

As for the other 3 spices, you can get at Malay shops, mostly at Geylang market - the fresh chicken stalls. They are stored with the other frozen food. I strongly recommend this as all of the mixes are authentic.

Our Dinner

Baked chicken - recipe from Lyana
Ondeh-ondeh keledek
Ice jelly with canned peaches - recipe from AT
Chicken Recipe

Spices
crushed garlic
tomato ketchup
chilli sauce
oyster sauce
dark sweet soya sauce
light soya sauce
honey
black pepper

Consistency is up to you, if you like it more spicy, darker, sweeter. Just mix with the chicken, marinate for a fe hours & bake.

Ondeh-ondeh keledek

500g orange coloured yam
100g tapioca flour
300g gula melaka - chopped
grated white coconut - add a bit of salt & steam, let cool.

Boil yam until soft.
Mash & leave to cool for a while.
Add tapioca flour & mix till the dough is soft.
Scoop about 2 teaspoonfuls, flatten it, put gula melaka in the middle & cover, shape it like a small ball. Continue until the dough is used up.
Boil water, add the shaped dough.
Remove from the boiling water when they float & roll into the grated coconut.
Ready to serve.

Ice Jelly

1 packet agar-agar powder
2.5 litres water
300g brown sugar.

Dissolve sugar in water.
Add agar-agar powder.
Boil the mixture.
Pour in large container.
When set, break the agar-agar into big pieces, add canned peaches or fruit cocktail. Add the syrup from the fruits as well. Let it chill in the fridge.
Before serving add lime juice & ice.

Urban Legend Choc. Chip Cookies

Before
After
Some call it USD250 choc. chip cookies or the Neiman Marcus choc. chip cookies...

250 g soft butter
2 cups brown sugar
Grind oats until it resembles flour to make 2 1/2 cups
2 cups plain flour
2 eggs
1 tsp vanilla essence
1 tsp baking soda
1/2 tsp salt
2 cups semisweet chips
4 oz semisweet chocolate - grate.
1 1/2 cups chopped nuts - optional

1.Preheat oven @ 180 deg. C.
2. Line baking tray with baking sheet.
3. Sift flour, baking powder, baking soda, salt & add ground oats together.
4.Cream butter & sugar for 5-8 mins. until it turns white.
5. Add 1 egg at a time & add essence, mix well.
6. Add flour a little at a time, mix well for another 5 mins.
7. Add grated choc. & mix.
8. Add chips & mix well.
9. The dough should be soft.
10. Scoop 1 teaspoonful & roll into circle.
11. Bake for 8-10 mins for soft cookies, 12 mins for crunchy cookies.

Cooked with so much love.....

Egg Tarts, yummy!!! About 2 inch in diameter, 60 cents per piece
Dal gravy
Cucumber & tomato salad

For the man who works hard for the money & the boys who never fail to say "mommy, thank you for cooking for me" during each meal....

At the moment, here the recipe for Egg Tart.

Pastry
250 g butter partially hard
1 egg
20g custard flour
300g or slightly more plain flour
90g icing sugar

1.Preaheat oven 180 deg. C.
2. Beat butter & sugar at low speed for about 5mins or less until creamy but not until white.
3. Add egg.
4. Add both flours.
5. Mix well , add flour if neccessary to form a firm dough.
6. Line the pastry in tart mould.
7. Pierce the moulded pastry lightly with fork.
8. Bake blind for 10 mins.

Filling
400g dairy whipping cream - non sugar in a carton
5 yolks
90g sugar
80g fresh or uht milk

1. Divide cream into 3 parts.
2. Heat 1st part of cream with sugar for a few mins. under low fire until the sugar dissolves.
3. Turn off fire, add 2nd part of cream & stir well until the mixture cools.
4. Mix 3rd part of cream with yolks & milk & add to the cooked liquid.
5. Strain & mix well.
6. Pour mixture into pastry & bake @ 180 deg. c for 10mins, turn the tray the other way round & bake for another 10 mins.
